Astorino Orecchiette Pasta
"EARFLAP" PASTA?! BELIEVE IT!
The Orecchiette is a type of pasta typical of the Puglia region, but above all of Basilicata, whose shape is approximately that of small ears, from which the name derives; Orecchiette means earflaps in Italian. This tiny little ear-shaped pasta is made to hold sauces in the bowl-shaped divots depressed in the center of each one, making it an ideal pasta shape for vegetable sauces.
Serve with your favorite vegetable sauces.
